Aaloo Parathe are normally done by stuffing the rotis with boiled spiced potatoes. But some how it becomes a difficult job stuffing and rolling. And one needs to roast on the flat pan properly and patiently otherwise they remain raw. I dont follow the traditional recipe…instead I prefer to knead the potatoes, masalas with the flour and simply roll it flat n NJOY !!!!
Ingredients:
4 boiled and grated potatoes, 2 tabsp of grated cheese, 1 tsp each – ginger garlic paste, coriander cumin powder, chat masala and red chilli powder or chopped green chillis. 1 tsp turmeric powder and sugar each, salt to taste. 2 cups of whole wheat flour, 1 cup of chick pea flour and 2 tabsp of self raising flour. 2 tabsp of oil and salt to taste. Ghee for roasting the parathas.
Method:
Mix all the above ingrdients except the ghee, with sm water. Knead it to a firm dough. Now divide the dough into tennis balls size and roll it in flat circles. Roast it on a hot pan and apply ghee max upto a couple of tsp per paratha. Serve hot with curds and chutney….. Njoy a healthy n delicious meal.
