Khubaani ka meetha is an authentic Royal dessert from Hyderabad. Made of dried apricots, it is an absolute divine treat to the mouth.
Dried Apricots 100 grams, sugar 3/4th cup, 1 cup plain water, 1 cup rose water, saffron a few strands and cardamom powder 1 tsp. Apricot kernels for garnish. Whipped cream 4 tabsp.
Soak apricots in boiling water for 3 hours. Keep it covered. Deseed it. Break the shell and keep the kernels aside for garnish. In a flat pan boil the Apricots, plain water and rose water together. Add sugar, cardamom powder and saffron. On low heat allow it to slow cook till it becomes soft and mushy. Add the apricot kernels. Serve hot with Ice-cream or whipped cream.
