Chicken Kheema pattice with mozzarella

Kheema pattice is ideal snack for the evenings…..especially during monsoon. A bite of spicy kheema and the oozing mozzarella satisfies the craving for junk food.

Ingredients:
Chicken mince 200 grms, ginger garlic paste 1 tsp. Turmeric 1/2 tsp. Coriandee cumin seeds powder 1/2 tsp. Red chilli powder 2 tsp. Garam masala 1/2 tsp. Salt to taste. Oil 1 tabsp for cooking the mince. And half the wok for deep frying.  Fried onions 1/2 cup. Coriander leaves handful chopped.
For the cover – boiled and grated potatoes 4 large.  2 tabsp corn flour and 1 tabsp whole wheat flour.  Salt to taste.
Mozzarella cheese cubed.

Method:
Heat oil in a pan and saute the mince. Add the onions, ginger garlic paste and all the above spices and seasoning. Staute till oil oozes out. Cover it and let it cook for 7 / 8 mins. Garnish with coriander leaves.
Cover – knead the grated potatoes with corn flour and wheat flour. Season with salt.  Knead till it becomes a soft dough.
Filling – make small lemon size balls of the cover and flatten it. Add the cooled mince a tsp each and place a cube of mozzarella.  Get together the flattened patty and make it into a slightly flat ball. Deep fry on low heat till it turns golden and the cheese inside it melts. Serve with mint chutney.

Doodhi halwa !!!

Doodhi halwa is an authentic Indian dessert made of bottle gourd, milk, ghee and Khoya. I make it in a quick and easy method with simple ingredients.

Ingredients:

Grated doodhi minus the seeds and the skin 1 kg, condensed milk 1 tin, ghee 3 tabsp, powdered cardamom and nutmeg a tsp each and some chopped nuts.

Method:

Heat ghee in a wok and saute the grated doodhi for 8 to 10mins till the water evapourates and the fat oozes out. Now add the condensed milk and stirfry till dry. Flavour it with cardamom and nutmeg. Garnish with chopped nuts.  Enjoy hot especially during the monsoons.
