Prawns wasabi is a quick and glamorous bite size party food. Its a complete mini meal..full of contrasting flavours. The subtle taste of potato at thr base with butter garlic juicy prawns and the power packed crown of wasabi mayonnaise.
Potato smileys or small toasties 8- 10
Medium sized prawns 8 -10
Butter 2 tsp, garlic finely chopped 1 tsp, salt as per taste and pepper 1/2 tsp.
Mayonnaise sauce 2 tabsp and Wasabi sauce (Japanese horse radish sauce) available in any supermarket.
Heat butter in a pan and sauté garlic. Add prawns , salt and pepper. Cook till tender.
Preheat the air fryer and fry the potato smileys for 7/8 mins on 200 degrees. It turns golden and crispy.
In a bowl mix 2 tabsp of mayonnaise with 1 tabsp of wasabi paste.
Serving – place the butter garlic prawns on the crispy smileys and smother the mayo wasabi over it. Enjoy with sparkling wine.
Tiramisu is the classic Italian dessert. Here is my take on Tiramisu in which I have infused saffron into the cream cheese , added almond liqueur instead of coffee liqueur to the biscuits and a layer of finely chopped almonds.
Wine biscuits 250 grms, black coffee ( boil coffee in water for 6/8 mins) 2/3 cups, whipped cream 2 cups, mascarpone cheese or cream cheese 1 cup , icing sugar 1 cup, Saffron 1 pinch, chopped almonds 1/2 cup. Almond liqueur optional
Layer 1 – soak wine biscuits in black coffee and layer it at the bottom of the cup, jar or a bowl. Drizzle a table spoon of liqueur.
Layer 2 – saffron infused cream cheese. (Boil saffron in a tabsp of milk. Allow it to cool and add to the mixture of cream cheese, icing sugar and then fold it into the whipped cream. )
Layer 3 – chopped almonds
Layer 4 ,5 & 6 repeat layer 1 , 2 and 3. For the crunch one can add muesli after the first layer. Cool for 3/4 hours before serving.
I make such desserts when I run short of time. My guest really enjoy this…the elements in this are fresh and have contrasting flavours. It is not only pleasing to the eyes but also low in calorie as compared to the deep fried and sugary ones.
Ingredients and method :
Starting from the base –
Crumble – Digestive biscuits, muesli, some butter, chopped nuts like almonds, pistachios and raisins.
Yogurt – next layer the crumble with flavoured yogurt.
Seasonal fruit – I have used mango here…but one can use any fruit of their choice. Simply slice them and use.
Whipped cream- I prefer to use the non dairy whipped cream. One can use any cream though.
Berries or Pomegranate- this is the top most layer. Mainly for garnish and making the dish in a presentable way. One can add chocochips or chocolate shavings along with berries or can even drizzle some homemade salty caramel sauce.
So impress your guest or treat yourself with such dessert. Quick and easy dessert /trifle is ready in minutes.
